Course Overview
HCPs need a solid understanding of food hypersensitivity pathology and empathetic counselling skills, so this course provides both the art and science of food sensitivity nutrition care.
We start with the pathophysiology of food sensitivity. Module #2: Physiology Overview discusses basic concepts that are essential for appreciating the nuances of food sensitivity. I summarize the current research in module #3: Above the Water – Our Current FS Knowledge. We delve into the widespread non-evidenced-based diet restrictions In module #4: The Murky Depths – Theories.
Module #5: Food Sensitivity Testing reviews common food sensitivity tests. We also explore the art of discussing this delicate topic with clients.
Module #6: Assessment covers helpful questions to help you understand your client’s journey and concerns. Self-reflection questions are part of the assessment, but they are also a powerful intervention, so I have created a separate module—Module #7: Compassionate Self-Reflection.
In module #8, Counselling Skills, I share my experience developing a solid therapeutic relationship with food-sensitivity clients.
Distress is a roadblock in the client’s healing journey. Module #9: Help Clients Out of Reactive Mode provides tools to help clients soften distress. In clinical areas that lack definitive clinical guidelines (i.e., there is not a clear intervention path), sytematic experimentation (module #10) is crucial to help clients discover what works for them.
In module #11: Elimination Diet and Challenge, we delve into the practical aspects of developing, evaluating, and supporting a client through elimination diets.
